Modelling chocolates

 
 
Modelling chocolates, it's very delicious and so versatile that you can make anything out of it like fondant. I decide to learn how to make this as I am a cream cake hobby maker. Other than fresh fruits, I wanted to make something different to decorate my cakes with.

Here is the recipe broken down into smaller batches easier for me to work with.

Ingredients:
113g dark chocolate
50g golden syrup (original recipe calls for light corn syrup but I haven't been able to find them in the shops)

Method:
Melt the chocolate over a double boiler, warm up the syrup in a jug.
Pour syrup into the melted chocolate and then fold gently. Keep folding until it comes together. The mixture will be stiff and like sugar paste. Once it's all combined, wrap with cling film and leave overnight to firm up.
When you're ready to use it, knead until smooth so you can start moulding it.

You will need a Madeleine cake tin, grease and dust with flour.
You can get 12-14 small madeleine's with this recipe. I have got my tin from Daiso in Malaysia.

Ingredients:
150g Glutinous rice flour
110g cold water
60g sugar
1g bicarbonate of soda
1b baking powder
white sesame
cooking oil for frying
* I added red bean paste as filling

Chinese Egg tarts

 
 These were my favourite tarts as a child, my parents use to buy chinese buns and egg tarts from the chinese bakeries when we visit China town. Usually the egg tarts gets eaten first and we leave the chinese buns for breakfast the next day.
 
I now make these at home for my children and they are really delicious.
I use a short crust pastry as it's a lot easier than the traditional puff pastry.
 
The pastry melts in the mouth and the eggy custard is perfectly set.
 

 So here is the recipe for you to make fresh egg tarts at home.
This recipe makes 15 egg tarts using medium tart cases, the custard is just enough for this size.

50g ground almonds
60g icing sugar
40g caster sugar
40g egg white
1 1/2 tsp green tea powder
 
I baked this at 130c for 15 mins.
