Two tiered Forest fruit cake

I made this two tiered Forest fruit cake for a very special friend of mine.
Her husband have arranged a surprise birthday party for her so I offered to make the cake.
My friend have no idea about the party or the cake.
And on the day, it went really well even the cake went down well too.
I have the pleasure of making this cake for her and it was one of the best cake I have made so far.
The whole process was very successful until the next day when I went to check on it, the cream on the top have cracked!!  I was panicking as I only had 2 hours to get my self ready and be at the venue before she arrives. I was lucky to have some marzipan on hand and I made a template and piped the message with chocolate icing.

This cake is made using  a 7 1/2 inch round and 9 inch square sponge.
Chocolate mirror glaze (I used a vegetarian gelatine)
Whipped cream
Tinned fruits & fresh chopped strawberries for filling
Lots of fresh Strawberries, raspberries and blueberries for deco.

A smaller version of this cake recipe is here

Here is a short video to show you how to make the dripping effects.

Disaster!! THE Cake cracked!!!

Marzipan saved the day!
Phew!

You wouldn't even know if I didn't tell you!  Hee hee...

  1. Wow.. The crack is a real disaster, but luckily you managed to hide it flawlessly! I just puzzled, what type of whipping cream did you use, or is it the fridge temperature too cold? Nevertheless, this is really a beautiful cake!

    1. Hi Fong! Hello, thank you for stopping by. Love your blog btw, I think it's because my fridge is too cold as the setting was on high. And I was very lucky to have marzipan.

  2. HI, it's a pretty cake. May I know how you stack the two cake together? Did you use any supporting material at the bottom cake? Thanks
